Is there truly anything better than a warm cup of soup on a cold winter day? This chicken bone broth soup recipe is just the thing you need to brave the upcoming winter months. This recipe is one of my favorite ways to easily incorporate bone broth into my diet. It’s a great recipe to meal prep ahead of time to eat for lunch throughout the week!
Bone Broth and the Wellness Space
Being transparent, it can be really difficult to enter the wellness space. There is so much conflicting information out there, and unrealistic expectations of what it means to practice wellness it can feel intimidating to know where to begin. From sleeping 8 hours every night to exercising for an hour daily it can feel like there are simply not enough hours in the day. I’ve struggled in the past with this all-or-nothing mentality.
One thing I struggled with when I first started learning about ways to support my body that is fighting an autoimmune disease was drinking bone broth. It sounds silly, but I got caught up in all of the miracle stories of people drinking bone broth every single day to cure their disease. I made it a goal to have a cup of it every night before bed, and I frankly did not enjoy it. It wasn’t something I looked forward to, I oftentimes would get upset with myself for skipping a night and feel like I failed. I found it to be an unproductive cycle I was caught it.
It wasn’t until I took the pressure off of myself to have a cup of it every night that I started enjoying it. I found ways to incorporate it into the recipes I was already making and took the pressure off myself to be exactly like anyone else. By finding ways to incorporate healthy things into my life that I enjoy, I find it to be much easier to continue these practices. The same goes for eating vegetables, exercising, and just about anything else! Find ways to do it that make YOU feel good.
Modifications are Okay
There is so much valuable information out there, but if something isn’t working for you, just know it’s okay to modify. There are many foods I’m unable to enjoy because of my Crohn’s and food sensitivities. Instead of beating myself up about my limitations, I focus on finding ways to eat the foods I love that feel good to me. Let’s start a conversation about making wellness accessible. You don’t have to have a routine just like ‘that girl’ to be considered healthy. You just have to do what works for you and your body.
Ingredients Needed
To make this chicken bone broth soup recipe you’ll need the following ingredients:
- Olive oil
- Chicken breast
- Rice
- Celery
- Carrots
- Yellow onion
- Potato
- Salt and pepper
- Beef bone broth
- Oregano
- Thyme
- Sage
- Kale
Equipment Required
To make this hearty chicken bone broth soup recipe you’ll need minimal kitchen tools. This is an easy recipe for people who are beginners in the kitchen, as all it requires is chopping up veggies and throwing everything in a pot. To make this recipe you’ll need:
- A cutting board
- A knife
- A large pot or dutch oven with a lid
- A wooden spoon
For measuring you’ll need 1 tsp, 1 tbsp, 1/2 cup, 1 cup, and 1 lb.
How to make this recipe
The steps to making this soup are extremely straightforward. One pro tip I have if you’re short on time is to buy your veggies pre-chopped. Trader Joe’s has a jar of pre-chopped carrots, onions, and celery just for soup recipes like this! You can usually find chopped veggies at just about every grocery store, they’re usually a bit more expensive but can be very helpful if you’re in a rush.
First, heat the olive oil in a large pot over medium heat.
Then, add the chicken, rice, celery, carrots, onion, potato, and some salt and pepper to the pot. Top with the Beef Bone Broth and bring to a simmer.
Next, cover, reduce heat to low, and cook until the vegetables are tender and the chicken and rice are cooked for 12 to 15 minutes.
Finally, stir in the oregano, thyme, sage, and kale and cook until the kale is tender for another 3 minutes.

Using other types of bone broth
In this recipe, I recommended beef bone broth, however you could also use chicken bone broth. Beef bone broth tends to be higher in collagen, which is what makes the bone broth considered a healing broth. However, if you’d rather use regular chicken broth or vegetable broth, this recipe will still taste delicious!
Adding in other vegetables
Like most of my other recipes, I always recommend modifying to your tastes and what you have on hand. Adding cauliflower, spinach, broccoli, or any vegetable would be a great addition to this recipe. When it comes to extra veggies, my thoughts are always the more the better!
Chicken Bone Broth Soup
Ingredients
- 1 tbsp olive oil
- 1 lb chicken breast cubed
- 1 cup rice
- 2 stalks celery diced
- 2 carrots diced
- 1 yellow onion diced
- 1 Yukon gold potato cubed
- 1 pinch salt and pepper
- 6 cups beef bone broth
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp sage
- 1/2 cup kale
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken, rice, celery, carrots, onion, potato, and some salt and pepper to the pot. Top with the beef bone broth and bring to a simmer.
- Cover, reduce heat to low and cook until the vegetables are tender and the chicken and rice are cooked for 12 to 15 minutes.
- Stir in the oregano, thyme, sage, and kale and cook until the kale is tender for another 3 minutes.
