Like ice cream flavors, colors, and seasons, everyone has a baked good they’re partial to. For me, it’s brownies. For my birthday every year growing up I always had my mom bake me her specialty, cream cheese brownies, instead of a birthday cake. It’s my ultimate comfort food and one that I keep in my constant rotation of desserts.
These flourless brownies are very easy to make and are not only gluten-free, but also dairy-free, and paleo! Finding a brownie recipe that tasted good and was made out of ingredients I could eat when I first started experimenting with food to help with my Crohn’s symptoms was important to me. Can I use ghee instead of coconut oil?
Yes! Ghee is a great substitute for the coconut oil in this recipe and eliminates the faint coconut flavor from the brownies. Ghee is also paleo friendly, so if you’d like to make the swap you can still share them with your paleo friends. You can use a 1:1 ratio to make the switch.
Can I add any additional mix-ins?
Absolutely! I love adding walnuts to brownies to add in an additional crunch. Feel free to include the chocolate chips, take them out, or add in any of your other favorite mix-ins. You really can’t go wrong with this recipe.
Flourless Brownies
Ingredients
- 1 cup almond butter
- 1/3 cup pure maple syrup
- 1 egg
- 2 tbsp coconut oil
- 1 tsp vanilla
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 cup chocolate chips I use Enjoy Life brand
Instructions
- Preheat the over to 325 degrees Fahrenheit.
- Whisk together the almond butter, syrup, egg, coconut oil, and vanilla until well blended.
- Stir in the cocoa powder and baking soda
- Stir in the chocolate chips
- Pour the batter into a 9x9 inch baking pan and bake for 19-23 minutes, until the brownies are done making sure not to overcook. Insert a toothpick into the brownies to ensure they're fully cooked, a clean toothpick will indicate they're done.
