I’ll be the first to admit that breakfast is a tough meal to get excited about. As someone who just doesn’t like eggs, I’ve always struggled with finding good protein sources to start my day. To this day my brother still teases me about my breakfasts of Eggo waffles with chocolate syrup and whipped cream (I’m not proud). Between the waffles and lucky charms, I spent my childhood mornings on a full-blown sugar rush. As I’ve gotten older, the more I’ve realized how counterproductive that was.
Enter my homemade chicken breakfast sausage. Through working with a nutritionist I’ve learned the importance of getting protein at every meal. I find I’m much more focused and alert when I include a proper protein source in my breakfast. Not only does this recipe help me start my day on the right foot, but it’s also incredibly easy to meal prep!

- Ground chicken
- Maple syrup
- Garlic powder
- Paprika
- Salt
- Pepper
- Olive oil

- A medium bowl
- A medium pan
- A spatula
For measuring you’ll need 1/2 tsp, 1 tsp, 2 tsp, 2 tbsp, 1/4 cup, and 1 lb.
How to make this Breakfast Chicken Sausage Recipe
Making homemade breakfast chicken sausage involves nothing more than mixing the ingredients and then cooking them on the stove. When all is said and done, you’ll have a delicious breakfast to eat throughout the week. Allot about 20 to make this recipe.
First, mix the ground chicken, maple syrup, garlic powder, paprika, salt, and pepper in a medium bowl. Ensure the ground chicken is evenly mixed with all of the ingredients.
Then, form small 2 inch patties with the ground chicken.
Heat the 2 tbsp of olive oil in a medium saucepan over medium heat. Add each of the patties to the pan. Flip the patties every 5 minutes until they are fully cooked through (after 10-15 minutes). Ensure the chicken is fully cooked by cutting into the patty to check that the meat is no longer pink.
Finally, serve warm and enjoy! Leftovers should be refrigerated and can last up to 5 days in a sealed container.

Using other kinds of meat
Typically when you think of breakfast sausage, pork is what comes to mind. Many are also fans of having turkey meat in the morning with the popularity of turkey bacon. Both of these substitutions would work well with this recipe and taste great! To make either of these swaps, simply make a one-for-one swap for the ground chicken with ground turkey or ground pork.
Making a breakfast sandwich with the patties
Not being a fan of eggs, I feel like I’m missing out on the excitement of omelets and breakfast sandwiches. I can’t say I’ve tried using these in a breakfast sandwich, however, I think adding them to an English muffin with some cheese and an egg would be delicious!
