Replacing the maple syrup with honey would be a one-for-one swap, which you could make. Using maple syrup instead of honey gives the carrots a different and sweeter taste in my opinion. Also, using maple syrup makes this recipe vegan so it would be a great option for any vegan guests you have attending your Thanksgiving celebration!
Using other nuts
When I think of Thanksgiving, the first nuts I think of are pecans because of the pie. I think adding walnuts to this recipe gives the table some diversity and a nice extra flavor. However, if you already have pecans on hand and would like to use those instead that would also taste great. Additionally, this step can be skipped if anyone at your table has a nut allergy.

Maple Glazed Carrots
Ingredients
- 2 lbs carrots chopped
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup chopped walnuts
Instructions
- Preheat oven to 400 degrees F
- Stir carrots, olive oil, maple syrup, salt, and pepper together in a large bowl. Spread evenly on a large rimmed baking sheet lined with aluminum foil and sprinkle with walnuts. Roast, stirring once, until tender, 20 to 25 minutes.
