Have any picky eaters in your house? These paleo chicken tenders are sure to be a hit with even the pickiest of eaters. How do I know this? First of all, I’m a former picky eater. To be honest I’m still pickier than most. However, I’ve come a long way from only ever ordering chicken fingers and pasta with butter when eating out.
After doing research on inflammatory foods, through lots of trial and error, and finally working with a nutritionist, I’ve learned what my body is sensitive to and wheat happens to be at the top of the list. Considering all of my favorite foods are focused around bread, I’ve done some experimenting with different recipes to recreate some of my childhood favorites and ultimate comfort foods.
These paleo chicken tenders taste just like the real thing, and are very easy to put together. The whole recipe takes under 20 minutes, which is almost as quick and easy as throwing a bag of frozen nuggets in the oven.
Paleo Chicken Tenders
Ingredients
- 1 lb chicken breast cut into strips
- 2 egg whites
- 1/3 cup almond flour
- 1/4 cup tapioca or arrowroot flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 tsp pepper
- avocado oil to cook in
Instructions
- Crack and scramble the egg whites in a medium sized bowl. Set aside.
- Combine all of the dry ingredients (almond flour-pepper) in a medium sized bowl.
- Heat the avocado oil in a medium saucepan over medium heat. You'll want to add enough oil so it is about 1/4" deep
- Coat each piece of chicken in the scrambled egg whites followed by the combined dry ingredients until well coated. Place the coated pieces in the saucepan (be sure not overcrowd the pan) and cook for about 5 minutes on each side until golden brown. Ensure chicken is no longer pink in the middle
- Serve and enjoy!
Let me know if you try this one! My favorite dipping sauce for any kind of chicken nugget is honey mustard. I’ll usually mix together whatever mustard I have on hand with honey to taste.
