This zesty Chicken Milano recipe packs in the flavor, and makes for the perfect easy weeknight meal. It’s been a consistent choice for me for several years, and one you’ll find yourself making on a steady rotation as well.
Funny story about this recipe, I first found my love for cooking when I was in middle school. I got home from school an hour earlier than my brother, and it happened to be when Rachael Ray’s show, 30 Minute Meals with Rachael Ray, was on. My mom was a fan, so her and I would watch together while I ate my afternoon snack. Rachael amazed me with her creativity when it came to her recipes. Between her witty banter, helpful tips, and delicious recipes, I was hooked.
I started actually playing around in the kitchen when I was in high school. Over the summers, I started making dinner for my family once a week. I grew a love for finding new recipes to try, and manipulating them to make them my own. By the end of my senior year, cooking and baking had become my creative outlet, and a source of comfort and joy.
I took a class in high school called Public Speaking. For our final we had to present in front of the class on any topic for 40 minutes. Stumped with the idea of what I could possibly talk about for 40 minutes straight, I thought back to Rachael Ray and decided to put on a cooking show for the class. I made this recipe, Chicken Milano, for my 9:00 AM public speaking class, and spoke about my love of cooking and Rachael Ray for 40 minutes straight. The recipe was a big hit, and it’s been a favorite to share with friends and family ever since.

- Cassava Flour Pasta
- Poultry Seasoning
This recipe is fairly straight-forward, and the ingredients can be customized to fit your preferences and tastes.
Equipment Required
This recipe does not require many tools at all. You’ll need a large pot to cook the noodles in, a large pan to cook the chicken in, and a cutting board and knife.
For measuring you’ll need 1/4 tsp, 1 tsp, 1 tbsp, and 1 cup.

Using a different type of pasta
You can absolutely use a different type of pasta! This recipe originally called for ramen noodles. I used cassava noodles because that was was the gluten free option I had on hand, but I’ve made this before with Banza chick pea noodles as well. This recipe would also taste great with regular spaghetti if you aren’t gluten free, or rice noodles. Feel free to try it with what you have on hand and let me know your thoughts!
Using chicken thighs
Using a different type of chicken meat such as thighs would work well. I haven’t tried it myself, but the cooking method would be the same.
Sun-Dried Tomatoes Replacement
Sun-dried tomatoes are so flavorful and really add to this meal so I highly recommend you use them if you’re able to find them at your local grocery store. I love the sun-dried tomatoes at Trader Joe’s and even included them in my 9 Trader Joe’s Must-Haves post. If you don’t have sun-dried tomatoes, you could use cherry tomatoes, and just ensure they’re fully cooked through (splitting and mushy) by the time you’re done simmering them with the chicken broth.
Chicken Milano
Ingredients
- 1 lb chicken breast boneless and skinless, chopped
- 2 tsp minced garlic
- 1 cup sun-dried tomatoes
- 1 cup chicken broth
- 2 tbsp fresh basil chopped
- 1/4 tsp pepper
- 1 package cassava flour noodles
- 1 tbsp poultry seasoning
Instructions
- Heat oil in a skillet. Once heated, add the chicken and garlic and cook for 10 to 15 minutes over medium-high heat until the chicken is cooked through.
- While the chicken is cooking, make your noodles according to the package. Drain and set aside.
- Add the sun-dried tomatoes, chicken broth, basil, and pepper to the pan with the chicken. Reduce heat to low and simmer for 5 minutes.
- Add the poultry seasoning to the drained noodles. Serve the chicken over the warm noodles and enjoy!
